Easy options:
1. Turn OFF the HVAC button before starting the engine.
2. Unplug the harness to the compressor
3. Remove the fuse for the compressor

Oil these days really depends on the compressor manufacturer. So many people selling different brands that fit vehicles claim they are OEM "Replacements", especially your eBay/Amazon shoppers. Some overseas compressors use PAG46 even though the OEM was something else. That's why you should verify ...

That's a 3-pass PF evap; there are other types. In this case, the refrigerant flows in sections, as shown in the green flow pattern. You can see each section from the weld marks close to the fitting connection. See your 3rd image.

Santech makes very good O-rings in general. IMO, HNBR is HNBR. If kept closed in a bag or plastic case, out of sunlight. Should be good. Are they flexible?
