I'm not super familiar with the truck but I if it's an expansion valve system I assume there would be a thermostat to read evaporator temperature. When replacing the evap did the temp probe get installed properly. If not the evaporator could be freezing up. Reading high side pressure is important. I...

If the system is cooling well most people wouldn't give it a thought. It never hurts to check pressures because even though it may be cooling it may be running irregular pressures. It's hard to diagnose a A/C system without knowing the Low and High side pressures. See if you can get those. Also you stated that the condenser feels colder to the touch. The condenser should never feel cold, it is usually pretty warm or hot. If it's cold it could suggest a restriction. Again, the ...
